what component can change a Multiturn VR (3600 degree)?

What do you mean by replacing? Your Variable Resistor broken and you plan to get another one? Or you want to change the design? Normal variable resister can do the work, but it cannot only turn around 270 degree which is not sufficient to show rotation, that is why we use 10 turn variable resistor.
Maybe you can explain more what you plan to do

Basically you connect 5V and GND to the edge terminal, measure the center Vout, it should change gradually in either increasing or decreasing, voltage. But do check the terminal of ten turn variable resistor.
