No idea.... what is the interfacing voltage of Atom processor?? ADC?

12V external supply. I'm not sure with the ADC but I think it doesn't have one. Is't possible to connect directly?

I just check another datasheet for Intel Atom E6xx series, it has 2 input 10-bits ADC for signal measurements.

You need to know whether it can withstand 5V or 3.3V, because the sensor need that voltage, and if the sensor is analog output, it might output up to 5V.
