OK, I do not have this sensor, but looking at the description from Cytron and the video, seem to be simple to use.
It does not matter whether you get 0 or 1 when flame detected, as long as it can differentiate there is flame or otherwise, you can use it. Since you say get logic 0 when there is flame, so program your UNO to recognize flame when it receive logic 0 from the sensor. Be flexible!
Same applied to the analog output. Calibration means you need to know the correct value, that's all.
